There are definitely thermostats that do this sort of thing out-of-the box.

I've lived in a couple places with the exact feature set you describe. No idea how much they are.

Oh, noting that there are in fact comments now for your thermostat fix :)

There's still some email-niceness missing from them, but hey, they exist.

You sound like you're looking for a 5+2-day programmable thermostat (versus 7 day or 5+1+1). Most of these have temporary and vacation overrides. A link is below:

You'll have to have access to your HVAC equipment to install it if replacing a simple analog thermostat, as well as a way to run the wire from the wall to the equipment. Either that or just cut the old one and install this new one in a more convenient location.
